Old Brown Java
Process: Washed
Altitude: 1400m
Roast: Medium
Characteristics: Smooth, earthy, and syrupy with notes of bitter chocolate and hints of spice. Naturally aged for two years in a warehouse, this aromatic coffee has lost much of its acidity whilst gaining body and sweetness.
Papua New Guinea Kongo
Process: Washed
Altitude: 1400m - 1900m
Roast: Medium
Characteristics: Toffee, chocolate, orange, nutmeg and spices. This coffee has medium body and low acidity producing a very easy drinking cup.
Papua New Guinea Kongo comes entirely from smallholder farms in the Simbu Region in the heart of the highlands. Coffee is the most important cash crop to the majority of the Simbu people and they are committed to producing very high quality beans through excellent practices at every stage of the growing and preparation process.
Coffee in PNG is mostly processed using the traditional wet method, with drying done with mechanical driers, raised beds or ‘sails’. Sails are tarpaulins stretched out under the sun to provide clean space to dry the beans.
This particular coffee includes a premium for the Jerry Kapka School Project.
Wahana Rasuna Natural
Process: Natural
Altitude: 1250-1450m
Roast: Medium
Characteristics: Full bodied, Caramel, Strawberry, White Grape
The Wahana Estate was established in 2005, and currently extends across 468 hectares, 250 of which are given over to growing coffee. The estate provides free housing, water and electricity to the 1,000 workers it employs, as well as there being a free health centre on site, kindergarten, and nursery.
The Rasuna varietal is a crossing between Catimor, which was widely found across Indonesia (and itself is a cross between Hybrido de Timor and Caturra), and Typica.
