Characteristics: This coffee opens with bright, juicy notes of green apple and strawberry, followed by the lively citrus sparkle of grapefruit. A gentle black tea character adds depth and refinement, while a touch of maple syrup rounds out the cup with smooth, lingering sweetness.
Further Information: Miramar is the highest area of the Los Nogales farm, where this lot of red and yellow Catuai is cultivated. After harvesting, cherries are promptly taken to the depulper, where about 20% of the mucilage is removed. The beans are then bagged in jute to protect any remaining mucilage before being laid out in thin layers on raised beds. Careful and consistent turning ensures even drying, a process that typically takes around 15 days, depending on weather conditions.
