Characteristics: Delicate lemon, caramel and citrus notes complemented by a light body and gentle acidity with a nutty and floral aroma. Mild, fragrant and complex.
Further Information: The beans removed from the cherry via a de-pulper, before going through a 12-36 hour fermentation phase. Afterwards, the cherries are washed in clean water and placed to dry on traditional raised beds and occasionally patios.
Known as the 'birthplace of coffee', Ethiopia has a reputation for producing high-grown and high-quality beans. In particular, the regions of 'Sidamo', 'Yirgacheffe' and 'Limu' are well-renowned for their washed-processed coffees, with fragrant floral, citrus and tea-like flavours naturally occurring in abundance.
