Characteristics: Soft smooth and aromatic with a delicate sweetness. Notes of rosehip, lemon tea and chocolate with subtle acidity and light body.

Further Information: In and around 'Yirgacheffe' (also spelled 'Yergachefe', 'Irgachefe' or 'Yerga Chefe'), coffee is typically grown on a very small scale in the gardens of producers where it can often be found inter-cropped with other subsistence crops. After harvest season, the coffee cherries are taken to the washing station where they are dried for 15 days within the compound itself before being brought to the mill where selection takes place based on flavour profiles, quality and processing.

The 'Yirgacheffe' region in Ethiopia produces some of the best coffee in the world and 'Yirgacheffe' coffee beans are overwhelmingly of the 'Heirloom' varietal, which is indigenous to Ethiopia, and have a distinctive yellow stripe after roasting.
