Further Information:
Cherries are grown by outpickers and delivered to Clarke Farm for processing, where they first undergo floatation to remove underripe fruit. Only the best cherries continue through production. Beans are then fermented in water overnight before being dried under the sun on raised beds. Final moisture finessing is completed in an eco-drier to ensure precise control. Each batch is graded after drying, and the onsite cupping lab carries out regular analysis to maintain consistent quality from lot to lot.
