Characteristics: Black tea, Nuts, chocolate & Marzipan. This coffee has a medium body and balanced profile, offering a smooth and comforting cup.
Cherries are carefully harvested and delivered to either the Sandia (Basilio) or El Pantano (Caldio) wet mills, where they are meticulously sorted and patio dried. Once dried, the cherries are transported to the El Duende dry mill.
At this stage, samples are roasted, cupped, and evaluated by the Quality Control Team. Based on these results, a detailed work order is prepared and handed to Antonio Ibarra, who has been overseeing the mill for more than fifteen years. His expertise ensures that specific lots are blended and processed to highlight the coffee’s distinctive flavor profile.
