Guatemala - Los Volcanes
Process: Washed
Roast: Medium
Characteristics: Light in body but full of flavour with notes of sweet toffee, citrus and apple.
Cherries here are processed at Los Volcanes mill in nearby Antigua. The cherries have to be carefully washed, as are frequently covered with a dusting of ash from Vulcan de Fuego.
El Salvador – Red Honey
Process: Red Honey
Roast: Medium
Characteristics: Green apple brightness, strawberry sweetness, grapefruit and black tea body with a maple syrup finish.
Miramar is the highest area of the Los Nogales farm, where this lot of red and yellow Catuai is cultivated. After harvesting, cherries are promptly taken to the depulper, where about 20% of the mucilage is removed. The beans are then bagged in jute to protect any remaining mucilage before being laid out in thin layers on raised beds. Careful and consistent turning ensures even drying, a process that typically takes around 15 days, depending on weather conditions.
Peru - Los Amigos Del Oso
Process: Washed
Roast: Medium
Characteristics: Sweet and nutty flavours with notes of treacle, pear, orange, juicy berries and black tea.
The El Oso Project works to conserve forests around the Santuario Nacional Tabaconas Namballe in San Ignacio, Peru—home to the endangered spectacled bear. Coffee farms in the buffer zone follow organic practices that protect wildlife and support sustainable production.
